The Leela Ambience Convention Hotel, Delhi has time and again come up with remarkable food festivals. Be it the Mehmoodabad festival, Hyderabadi festival, Thai festival or the GT road festival, every one of them have been thoroughly studied and bought forward. The depth of knowledge and the command that Chef Ashwani Kumar Singh has over the food and the concepts behind each of them is commendable. Well who wouldn’t love to hear the stories behind ‘why a kebab is called a kebab?’ or ‘how a shikampuri kebab is prepared so that it is melt in the mouth’. After all food not only binds people but also makes for fascinating conversations.
This time around they have the AllThatisYogurt festival ongoing till the 20th of June 2018. Any recipe that has yogurt as one of the ingredients has been recreated specially for your palate at this festival at Dilli32. From beautiful concoctions of yogurt based cocktails to creamy terrines, from delicious kebabs to baked khichdi, the menu is elaborate to the detail.

Available as a-la-carte, this dinner only menu serves delicious starters like Dilli32 Kachori Chat – which gives new meaning to famous kachori; Compressed Watermelon & Shrikhand – which brings the modernity to the menu; Avocado Tartar. The best among the starters will however be Dahi Ke Kebab and Shikampuri Kebab – both melt in the mouth – subtly flavored and finger-licking good. We now have a benchmark for Dahi Ke Kebab and wherever we try these – a comparison will be drawn, rest assured! Similar things can be said for Shikampuri Kebab – again melt in the mouth, stuffed with curd and minimal spices, it brings out the best of the meat and let’s you get lost in the aroma.

A well researched menu makes a menu great – and it has happened with the main course section of the festival. A handful of items makes the selection easy – and also lets the best of the best served as part of the menu. Chha Gosht – tradionally made with buttermilk, is a Himachali preparation – pair it with a bread or a bowl of steamed rice and you will see the flavors it packs. Murg Ro Khatto – has a name that is self explanatory. Coming from the region of Rajasthan this has a tangy taste because of the curd and well cooked chicken pieces, paired well with a hot chapati.
The vegetarians will be equally delighted with the menu – Kashmiri Dum Aloo has that unique taste of Kashmiri chillies – subtly tangy and spicy, they go equally well with a parantha or rice. Baked Khichri is something that we heard/ate for the first time. With its origin in Bihar, this is not the usual Khicri that we make at home – this has sprouts and rice, with a layer of curd on the top and baked – served with tawa grilled bhetki fillets and aloo jhuri, this one was the surprise of the day. Mochhi was another dish which we enjoyed, mainly because of the way it is served – with ghee bhat and aloo choka – the combination is appealing. The curry can be best described as a variant of gatta in kadhi.
With 4 choices in Dessert, we would say this is a vast menu by many standards. You can’t talk about curd and not have Mishti Doi on the menu – it dons the menu, but we didn’t get to try it, we were so full. Dahi Ke Jamun O Gul is served with Avocado ice cream and is flambed on the table – although I would have preffered it without it. We were told the gulab jamuns used curd during the making (which is quite unheard of) and hence are a part of the menu. Banoffee & Nutela Greek Yogurt Parfait is served in a waffle, with dry fruits, caramel popcorn and crumble – its kind of a meal in itself, so order it accordingly. Lemony Frozen Yogurt Terrine again is very well made, with the dash of tanginess and the goodness of berries and mango.
